Heart-Healthy Recipes for Valentine’s Day

“We stock our olive oils according to the growing seasons throughout the world. We’ve just received our northern hemisphere shipment with freshly crushed oils from Italy, Spain, Portugal, and California,” says Marianne.

All recipes use heart-healthy Olive R Twist olive oils and balsamics for the best flavor!
1.5 lbs. plum tomatoes, seeded and diced
¼ C. chopped fresh parsley or basil
6 tbsp. Tuscan Herb Olive Oil
2 tbsp. chopped red onion
2 garlic cloves, minced
2 tsp. traditional dark balsamic vinegar
Stir all ingredients together. Let stand at room temperature for 15 minutes, then refrigerate for 45 minutes. Serve over sliced baguettes. Drizzle with additional dark balsamic and serve!
Lemon Pesto Sauce
3-4 C. basil leaves
¼ C. grated pecorino cheese
¼ C. grated parmesan cheese
¼-½ C. Lemon Olive Oil
½ fresh lemon (juiced)
¼ C. pine nuts or walnuts
2-3 garlic cloves
Pepper, salt, butter, basil olive oil for drizzling
In a blender or food processor, puree ¼ C. oil, garlic and nuts. Lightly pack basil, add remaining ingredients and blend until smooth. Add more oil for a thinner consistency. Add to your favorite prepared dish (pasta, fish, chicken).
Take ½ C. dark balsamic vinegar (any flavor, we used blueberry) and slowly bring to a simmer. As it reaches a boil, gently swirl the balsamic around the pan. You’ll notice it begins to leave a trail behind. When you see an even trail, remove the pan from heat and let cool to room temperature, creating a thick crème. Drizzle over vanilla Greek yogurt and top with berries.
